As I look forward to our summer travels in the upcoming month of July I look back on pictures from last year. As an excursion off our Albania mission trip we spend 3 days in Rome and I NEVER SHARED PHOTOS. What?! So in honor of upcoming travels here are some pictures from last summer's travels.

Lunch In The Summer
So I'm no food blogger (or food photographer) but I found this recipe when I went to a cute cafe called Toute Suite. Avocado and chicken salad are two of my favs so why not put the chicken salad in the avocado?? Genius! So since then I've resorted to making this super simple and relatively healthy lunch quite often. So I encourage you to try it! Also, on a side note I made my first smoothie today for my hubby. Go new blenders!
What you need:
Mayo
Onion
Chicken *cook your own if you have the time
Celery
Avocados *1 for each person
I don't use specific measurements but here is a good estimate:
1 stalk of celery chopped
1/2 of a small onion chopped
1/2 Cup mayo (add more if too dry)
Pepper to taste
Thyme to taste
Paprika to taste
1/2 of a small onion chopped
1/2 Cup mayo (add more if too dry)
Pepper to taste
Thyme to taste
Paprika to taste
Mix all ingredients together in a bowl
Cut each avocado in half and spoon in chicken salad! Top with pepper if you'd like and enjoy!
Oh and here is a cutie drinking a smoothie!

I've Got Georgia On My Mind
Finally after a year of talking about going to visit one of my sweet friends in Atlanta we made it happen! The only time I've ever been to Atlanta was driving through on a trip to Florida when I was probably 11. I absolutely loved every minute of being there! The city is much cleaner than Houston (even though I love H-town). There were hills and trees everywhere. I miss having hills. Texas is very flat, or at least where I live. We spent most of our time outside which was so refreshing since I had just gotten out for summer break from my second year of teaching. We biked on the belt line, hiked Kennesaw Mountain, visited awesome restaurants and coffee shops, and hit up some unique local shops. I also attended my first pig roast. Delish! It was such an amazing trip and I can't wait to go back. :)

Married Life
Today I've officially been married to the most loving guy for an entire month. Hehe. The wedding was perfect and it feels like it was just yesterday. Time has seriously just flown! We expected our lives to slow down after the wedding since we would no longer be driving back and forth from the suburbs to downtown Houston to see each other. Except life has not slowed down at all! It keeps getting crazier! I guess thats what happens when two busy bees marry each other. In the weeks since we have been married we have hosted my bestie and her boyfriend for Memorial Day weekend fun, decorated our adorbs home, celebrated my 24th birthday with friends and pizza, finished teaching 5th grade, and I took a trip to Atlanta. We've been learning a lot about each other in these past few weeks that we didn't know prior to living together and I'm sure we'll never stop learning about each other! Up next on our summer agenda is for me to finish summer grad classes (end of June), hopefully my parents will be visiting, lots of pool days, Albania mission trip, honeymoon, and then prepare for school again in August. We are so excited for our summer plans but it will go too fast. I plan to soak up each moment and some sun ;) maybe I'll get a tan! (or more freckles) Here is life lately via photos...

Sunday, Sunday
Hello beautiful people! Sundays are normally full of run, run, run for me. Today I chose to not run and to get some things done that were long over due. Like unpacking my suitcase from my trip home for Christmas. Yep, it sat on my floor for 3 weeks. It was like living out of a suitcase in my own apartment. I literally am never home so thats what happens. I am always at work, church, grad school, or catching up with friends in my few spare moments.
Yesterday, Matt and I looked around at some future homes/apartments. House hunting at its finest. -Last time I went apartment hunting (with my roomie) we encountered a problem when reading reviews of the place that scared us right out of our contract a month before we were supposed to move in. We didn't think to look at the reviews for some reason until last minute. Luckily we live someplace great though. - Anyways, Matt and I rolled up to this beautiful apartment in the Woodlands to check it out. We walked in and the lady said give her a few minutes so we did. During those minutes I looked up their reviews only to find a strand of terrible reviews revealing bug problems. I literally said lets run. lol. Needless to say, we left without talking to the lady. Now I know you might be thinking you can't trust those reviews sometimes however, when they are consistent I will trust them. No bugs for me. I hyperventalate each time I see the Texas sized creatures. So we went on with our future home hunting. We ended up finding a place we love but we aren't rushing anything because we still have time to look at other places. If we don't find something else we love more well then we know where to go.
To my main point of this post... all this house hunting and future life planning has me Pinteresting like crazy! I cannot wait to DIY everything! Matt is pretty awesome at making unique things so I'm pinning all the projects that deal with power tools so he can do them. ;)
